Kick off the fall season with a batch of this healthy Apple Pecan Quinoa Granola!
- 1 cup rolled oats
- 1 whole apple
- 2 tbsp ground flaxseed
- 1/3 cup uncooked white quinoa
- 1 cup chopped pecans
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/8 tsp salt
- 3 tbsp melted coconut oil
- 1/2 cup unsweetened applesauce
- 1/4 cup maple syrup
Using either a mandolin or a knife, cut the apple into very thin slices crosswise. Arrange the apple slices in a single layer on mesh racks. Dehydrate at 130° F for at least 5 hours, or more if desired.
In a large mixing bowl, combine oats, flaxseed, quinoa, pecans, cinnamon, nutmeg, and salt.
In a separate medium bowl, stir together coconut oil, applesauce, and maple syrup. Pour wet mixture over dry, add in finished dehydrated apple chips, and stir to combine.
Arrange mixture on mesh racks in an even layer. Bake at 350° F fro 10 minutes. Allow to completely cool before serving. Enjoy!
