Enjoy this hearty salad in the summertime. From its wilted crunchiness to its sweet flavor, this is a dish that won't disappoint!
Ingredients:
6-8 small-medium hearts of Romaine
olive oil
salt & pepper
Raspberry Poppy Seed Dressing:
1/3 cup confectioners’ sugar
¼ cup raspberry vinegar
2 tbsp orange juice
½ tsp onion powder
¼ tsp salt
¼ tsp ground ginger
1/3 cup canola oil
½ tsp poppy seeds
Directions:
In a blender, combine the first six ingredients for the dressing. While blending, gradually add in canola oil until all of the ingredients are blended smooth. Transfer dressing to a mixing bowl and stir in poppy seeds. Refrigerate until ready to serve.
Preheat grill to medium high. Brush all romaine halves with olive oil evenly on both sides. Season with salt and pepper to your liking. Place them on the grill and cook for 2-3 minutes per side, or until nicely charred. Drizzle chilled salad dressing on top and enjoy!
