Strawberry Rhubarb Crumbles

This dessert is perfect as a mini dessert to serve at a party or a main dessert to enjoy after dinner with your family. Make sure to hull the strawberries to ensure there are no stems in your dish. Hulling them is an easy process, you simply take a knife and cut around the stem and pull the stem out at the end. Rhubarb adds a tart flavor that compliments the sweet taste from the strawberries. Trimming the rhubarb is just another term meaning to peel the red skin off until your rhubarb is green. If you don’t have rhubarb, feel free to use a replacement for that tart taste, such as cranberries or quince. Remember to cut the butter into small pieces, so that it is easier to combine with the flour to create the crumble mixture. Almonds are the best with this dish, because they’re ideal for crushing or mixing with flour. We used air fryer safe ramekins, but you could also use muffin trays! It is important to butter your ramekins or use cooking spray to ensure your dessert doesn’t burn or stick to the bottom. Make this a healthier option by utilizing gluten free flour or dairy free ice cream to serve with!

Ingredients:

butter, for the ramekins

1 lb. strawberries, hulled and halved

1 lb. rhubarb, trimmed and cut into ½ inch pieces

¼ cup + 3 tbsp sugar, divided

1 tbsp cornstarch

6 tbsp unsalted butter, cut into small pieces

¾ cup all-purpose flour

¼ tsp salt

¼ cup unsalted almonds, chopped

vanilla ice cream, for serving

Directions:

Preheat the air fryer to 350°F. Lightly butter 8 oz. ramekins and set them aside.

In a large bowl, toss together the strawberries, rhubarb, ¼ cup sugar and cornstarch.

In a second bowl, combine the butter and flour, rubbing together with your hands until they resemble breadcrumbs. Then, add the remaining sugar, salt and almonds and squeeze the mixture together to mix well.

Divide the fruit mixture among the ramekins and top with the crumble mixture. Place in the air fryer and bake for 18 minutes. Serve with vanilla ice cream and enjoy!

Red, White and Blue Frozen Lemonade

This striped lemonade is the perfect patriotic drink to serve on the 4th of July. It’s also super simple - it only requires a few ingredients to throw in the blender, blend and done! The tart taste from the natural blueberries and the lemon juice compliments the sweetness of the sugar rather nicely. We recommend only using ½ cup of sugar, because it was very sweet! However, if you like it that way then leave it at 1 cup of sugar. You can use fresh or frozen blueberries, but fresh ones will blend easier with the ice. Different objects you could use to muddle the blueberries are a muddler, tortilla roller, or any other blunt object you have in your kitchen! We used our Premiere High-Performance Blender and we utilized the Smoothie preset and let it blend for 30 seconds. We threw our glasses in the freezer for 10-15 minutes to achieve that chilled affect, but it isn’t necessary. This beverage could be made for any occasion, just switch up the fruits, such as strawberries, blackberries or raspberries!

Ingredients:

1 cup lemon juice

1 cup sugar

4 cups ice cubes

1 cup blueberries, fresh or frozen

maraschino cherries

Directions:

Place the lemon juice, sugar and ice in a blender, blend until you have a slushy mixture.

Divide the blueberries among four chilled glasses and muddle them slightly. Then, add the lemon slush, top with cherries and enjoy!

Strawberry Tomato Salsa

The combination of these bright fruits and vegetables makes this the perfect summer recipe. This salsa has a great combination of sweet and tangy. It is sweet because of the strawberries and balsamic vinegar and tangy because of the cilantro and green onions. The original recipe was just to chop and mix everything in a bowl to mimic a pico de gallo dish. We decided to switch it up and utilize the Electric Grill and a High-Speed Blender. We grilled the tomatoes and strawberries to achieve that smoky, grilled taste. Using a blender gave this salsa that smooth texture, rather than a chunky salsa. If you use a grill, take advantage and make a full grilled meal with this salsa and grilled chicken! Pair tortilla chips to make this an ideal appetizer or scoop it on top of chicken, pork or even tacos! This will yield 6 cups of salsa, so you are able to serve it to more than just a few people!

Ingredients:

4 cups cherry tomatoes, quartered

2 cups fresh strawberries, chopped

8 green onions, chopped

½ cup fresh cilantro, minced

6 tbsp olive oil

2 tbsp balsamic vinegar

½ tsp salt

Directions:

Slice the tomatoes and strawberries in half. Then, spray your grill plate with cooking spray and place the tomatoes and strawberries on the grill.  Grill on medium heat for 2-3 minutes on each side, working in batches if necessary.

In a high-speed blender, combine the tomatoes, strawberries and green onions until blended well.

In a small bowl, whisk the olive oil, vinegar and salt, gently stirring into the tomato and strawberry mixture. Stir in the chopped cilantro and refrigerate until ready to serve.

Cherry Glazed Chicken Wings

This dish achieves a sweet and spicy flavor. They are spicy because of the hot sauce and sweet because of the cherry preserves. We used the chicken wings as they were, but you could also cut through the wing joints and discard the wing tips if desired. The original recipe called for canola oil, but you could also use vegetable oil! Different types of hot sauces you could try are Chili Garlic Sauce, Mexican Green Habanero Sauce or Sriracha Sauce! We whipped up the sauce using the stove top and then transferred the wings to the Air Fryer Oven to cook them. Feel free to use the Pressure Cooker and the Sauté setting for the sauce and the stove top oven or regular Air Fryer for the wings. It is important to flip your wings halfway through to ensure they don’t burn, and one side doesn’t cook more than the other. Use a meat thermometer to be sure your chicken is done; the temperature should be at 165°F. Serve your chicken wings with dipping sauces, such as Spicy Peanut Sauce, Chipotle Mayonnaise or Creamy Ranch Sauce!

Ingredients:

12 chicken wings

3 tbsp canola oil, divided

1 garlic clove, minced

1 cup ketchup

½ cup apple cider vinegar

½ cup cherry preserves

2 tbsp Louisiana-style hot sauce

1 tbsp Worcestershire sauce

3 tsp salt, divided

1 tsp ground pepper, divided

Directions:

In a small saucepan, heat 1 tablespoon of oil over medium heat. Then, add in the garlic and cook and stir for 1 minute. Stir in ketchup, vinegar, cherry preserves, hot sauce, Worcestershire sauce, 1 teaspoon salt and ½ teaspoon pepper. Cook and stir until heated through.

Brush the wings with remaining oil and sprinkle with remaining salt and pepper.

Place the wings on the mesh rack in the Air Fryer Oven and air fry them at 350°F for 20 minutes, flipping halfway through. Brush with glaze during the last 5 minutes of air frying.

Serve with remaining glaze.

Hot Dog Kebabs

This summertime recipe gives a different twist on the usual hot dog in a bun dish. The original recipe called for bell peppers and pineapple to achieve that sweeter taste. We went a different route and utilized jalapenos instead. The jalapenos and barbecue sauce add a sweet and spicy flavor to the mix. You could make this a healthier option and use turkey franks rather than beef ones. We used the Air Fryer to cook up the bacon, but feel free to use a microwave, oven or even grill! Only cook the bacon for a minute or two, because you don’t want it all the way cooked. It will be going back in the Air Fryer to cook with the rest of the ingredients and you don’t want burnt bacon! We used our skewer set that comes with this Air Fryer, but feel free to use your own metal or wooden skewers. Just make sure if you use wooden ones, that you let them soak in water 1 hour prior to using. We used the Air Fryer to make this dish, but you could also use the Grill or Air Fryer Oven! Eat these delicious skewers by themselves or stick in a hot dog bun!

Ingredients:

1 package Beef Franks, 14 oz.

8 slices of bacon

2 medium red bell peppers, cored and cut into 1-inch chunks

4 jalapenos, cut into 1-inch chunks

½ cup barbecue sauce

cheddar cheese, for sprinkling

Directions:

Cut each beef frank crosswise into halves and set aside.

Place the bacon in a single layer in the air fryer basket with perforated parchment paper (optional). Air fry at 400°F for 2 minutes. Once they are done cooking, cut each bacon slice crosswise into halves.

Wrap 1 piece of bacon around 1 piece of beef frank. Alternately thread 1 bacon wrapped frank with 1 piece of jalapeno and bell pepper onto each skewer. Brush each skewer with barbecue sauce.

Place the hot dog kebabs on perforated parchment paper (optional) in the air fryer basket and air fry at 375°F for 10 minutes, checking on them halfway through. Once they are done cooking, brush them with extra barbecue sauce, sprinkle with cheese and enjoy!

Potato Salad

This All-American summer dish is perfect for barbecues, parties, picnics and more. We selected russet potatoes, because they have a “mealier” texture. When they cook, it has a more crumbly and starchy texture that will add creaminess to the potato salad. If you aren’t fond of Russet potatoes, Yukon Gold potatoes can be used instead for a buttery flavor. Red potatoes are great for a waxier texture, meaning they will hold better shape, but won’t be as creamy. We used our Pressure Cooker to cook the potatoes and eggs, but you could cook them in a pot on your stove top, too! Make sure to use a fork to check the tenderness of the potatoes. Feel free to use apple or white distilled vinegar, but white distilled vinegar will have a milder pungency. Make this a healthier option by utilizing yogurt. Ingredients that could be sprinkled on for garnishing are whole celery seeds, fresh onions, parsley or sweet pickle juice! Make this potato salad a Hawaiian inspired salad and add chopped ham, pineapple and Fuji apples. This dish can also be prepared 2 days before serving as long as you seal it in an airtight container.

Ingredients:

2 lbs. russet potatoes

1 tbsp salt

2 tbsp distilled white vinegar

½ cup celery, diced into 1/8-inch pieces

½ cup mayonnaise

¼ cup dill pickle relish

2 tbsp red onions, diced into 1/8-inch pieces

2 tbsp parsley, minced

1 ½ tsp mustard

¾ tsp salt

½ tsp black pepper

½ tsp onion powder

2 hard boiled eggs, diced into ¼ inch cubes

Directions:

Peel the potatoes and cut them into ¾ inch pieces. Place them in the Pressure Cooker and add 1 tablespoon of salt and 1 cup of water. Place the eggs on top of the potatoes. Pressure cook them on high pressure for 7 minutes.

Take the eggs out, chop them into ¼ inch cubes and set them aside. Drain the potatoes and transfer back to the inner pot.

Add the vinegar to the inner pot and toss gently to combine. Let stand for 20 minutes, the potatoes will still be warm.

After they are warm, transfer them to a large bowl.

In the same large bowl, gently stir together the potatoes, celery, mayonnaise, relish, onion, parsley, mustard, ¾ teaspoon salt, ½ teaspoon pepper, onion powder and chopped eggs. Add more salt and pepper to taste.

Cover and refrigerate for 1 hour. When ready to serve, garnish with more parsley, celery and onion if desired.
