National Lobster day is this Sunday so we urge you to make these delicious Air Fryer Lobster Cakes! It is super simple to prepare these and can be served as an appetizer or a quick lunch or dinner. Either way you choose, you'll love them!

 

 

 

 Ingredients

  • 8 oz lobster meat, chopped
  • 1/2 cup buttery cracker crumbs
  • 1/2 a lemon, juiced
  • 2 Tbsp green onions, chopped
  • 1/4 cup plain Greek yogurt
  • 1/2 an egg, whisked
  • 1/8 tsp celery salt
  • 1/8 tsp black pepper
  • 1/8 tsp paprika
  • 1/8 tsp dry mustard
  • 1/8 tsp ground ginger
  • 1/8 tsp cayenne pepper
  • 1/4 cup plain Greek yogurt
  • 1/2 tsp cayenne
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 a lemon, juiced

 

Instructions

  1. In a bowl, mix together the lobster meat, crushed cracker crumbs, lemon, green onion, Greek yogurt, egg, celery salt, pepper, paprika, dry mustard, ginger and cayenne.
  2. Let the mixture set in the refrigerator for 30 minutes.
  3. Next make the dipping sauce by mixing the remaining Greek yogurt with cayenne, salt and pepper. Juice the remaining half of the lemon and mix. This is meant to be a spicy sauce, but you can add in as little cayenne for your spice limit. Set aside.
  4. Remove the lobster mixture from the refrigerator. Form into 5 equal sized patties.
  5. Spray your air fryer basket with an oil spray to prevent sticking and place them into the basket.
  6. Air Fry at 400F for 10-12 minutes.
  7. Top with the spicy dipping sauce and enjoy!
