St. Patrick's Day is over, and many of us are now stuck at home. Today we will let you in on a secret - pretty much any leftovers are amazing if you put them in an egg roll! Check out how we breathed new life into our leftover corned beef and cabbage.

To make this recipe we used our new 7 QT Digital Touchscreen Air Fryer. With 7 quarts of cooking space, this air fryer is perfect for feeding the whole family or to whip up some snacks for a party. Easily cook a whole chicken or 4-5 burgers at the touch of a button, and without heating up the house.
What you will need:
Corned beef leftovers
Egg roll wrappers
1. Place the egg roll wrappers on a work surface. Divide the filling mixture among the wrappers, using about a tablespoon or two of filling for each one. Brush the edges of the wrappers with water
2.Fold one corner over the filling, then fold in the sides and roll up
3. Brush the little egg rolls with vegetable oil and place in your air fryer
4. Cook for 10 minutes at 400 degrees
5. Serve with leftover sauce and Enjoy!
