Watermelon Agua Fresca
This popular Mexican drink is ideal for sipping by the pool in the summertime. The combination of honey, lime juice and watermelon make this a light and refreshing drink that has the perfect balance of sweetness! We cut this recipe in half, but feel free to double it if you are making a round of drinks for the whole family or even a party! It is optional to strain the watermelon mixture after blending it, but we went ahead and did so. Straining the mixture will get rid of any lumps and will make your drink smoother. We used regular honey for this recipe, but you could switch it up and use a different type of honey like raspberry blossom honey! We served this beverage with lime slices, but go ahead and use other toppings, such as watermelon slices or fresh mint leaves!
Ingredients:
3 lbs. of seedless watermelon, cut into 2-inch pieces
2 cups cold water
1 tbsp lime juice, freshly squeezed
1 tbsp honey
ice cubes
lime slices and mint leaves for garnish
Directions:
Cut the watermelon flesh from the rind and cut into 2-inch pieces.
In a blender, combine half of the watermelon pieces and 1 cup of water and blend until smooth. Pour through a strainer and into a pitcher. Repeat the same process with the remaining watermelon pieces and water.
Then, stir in the lime juice and honey. Place into ice-filled glasses and garnish with lime slices and mint leaves to your liking and enjoy!
Strawberry Lemonade
A large pitcher of this thirst-quenching drink is all you need to survive the summer heat! You can use honey or agave to sweeten it up. Using sparkling water will give it that extra kick and fizz, but you can use flat water if you prefer. You can strain the lemonade before serving to achieve a smoother texture, but it isn’t needed. The original recipe called for basil blossoms and basil leaves, but we didn’t have any, so we opted out of using those ingredients. Go ahead and use them if you desire or improvise and serve with a strawberry slice, lemon wedge or a different type of garnish! Go the extra mile and turn this into a cocktail by adding vodka or rum to the mix.
Ingredients:
1 cup lemon juice, freshly squeezed
14 strawberries, half sliced and half whole
15 basil leaves
5 tbsp honey
3 cups ice
6 cups water
5 basil blossoms for garnish
Directions:
In a blender, combine the lemon juice, 7 whole strawberries and 5 basil leaves and blend until smooth.
Add the sliced strawberries and the remaining basil leaves into a bowl and refrigerate until ready to serve over ice.
Strain the strawberry mixture into a pitcher and stir in the honey. Add the flat or sparkling water into the pitcher and stir to combine. Adjust taste with more honey if desired.
Add the chilled sliced strawberries and basil leaves into the pitcher. Garnish with extra basil leaves and basil blossoms if desired and enjoy!
Sparkling Mango Mint Lemonade
This drink puts a twist on the classic Lemonade beverage. Make sure to choose a softer mango to ensure it is easier for you to chop. An easy way to chop one is to slice each side, then slice the flesh and then scoop the slices out. We added sugar to balance out the sour taste from the lemon. You can pour this drink over ice and top with cold water or go even further and throw in a splash of club soda for that fizzy and tangy taste. The original recipe called for fresh mint leaves as garnish, which were not available to us, so feel free to try this recipe with or without! We recommend chilling the club soda and serving the final drink chilled to make sure you can enjoy this crisp and fizzy refreshment in all its glory!
Ingredients:
1 mango, large
4 lemons, large and juiced
¼ - ½ cup mint, optional
2/3 cup sugar
2 cups water
2-3 cups club soda, chilled
ice, to serve
lemon wedges for garnish
Directions:
Wash, peel and chop the mango flesh.
Then, combine the mango, lemon juice, mint leaves, sugar and water in a blender and blend until smooth.
Taste the mixture and add more sugar if needed. Then, strain the mango lemonade mixture to remove any fibers and pour into a large pitcher.
Let the beverage chill in the refrigerator for 30 minutes. Then, add ice cubes to a large glass and fill 1/3 of the glass with the mango lemonade mixture and top with club soda.
Garnish with fresh mint leaves and lemon wedges if desired and serve chilled!
Roasted Peach and Strawberry Fizz
This summer beverage combines the best of both worlds giving you a sweet AND grilled taste that you’ll love. We opted for peaches and strawberries but go ahead and use other combinations like apples and peaches or cherries and blueberries. Roasting the peaches makes it easier to remove the skin from them. We used our Electric Grill to roast our peaches, but feel free to use an air fryer, outside grill or oven! Just make sure to allow your peaches to cool down for the recommended time, so that you do not burn yourself. We chose to use sparkling water to give it that extra fizz, but don’t hesitate to use regular, cold water.
Ingredients:
3 peaches
21 oz. strawberries
1 ½ cup apple juice
1 ½ cup sparkling water
crushed ice
Directions:
Preheat your grill to medium high heat. While you are waiting for your grill to preheat, cut the peaches in half and remove the pit. Place the peaches on the grill and roast them for 4-5 minutes.
Once the peaches are done roasting, remove them and let cool for 10-15 minutes.
Then, remove the skins from the peaches and combine the peaches, strawberries and apple juice in a blender and blend until you get a smooth puree.
Divide the puree mixture into 6 glasses and add ice. Top with sparkling water and strawberry slices on the rim and enjoy!
