Summertime is great for enjoying anything sweet! It satisfies that sweet tooth and let’s face it, it makes those scorching summer days not so bad. Follow along below as we show you some of our favorite sweet treats for this season using our products.

 

 

 

Chocolate Chip Cookie Cake

 

 

 

This fun sweet treat has the perfect combination of crumbly goodness from the cookies and cold creaminess from the ice cream. We cut this recipe in half but go ahead and make the full recipe if you’re feeding a lot of people. You could switch up the cookie and make an oatmeal raisin or dark chocolate one! There are so many flavors of ice cream to use but think outside of the box and use cake batter, cookies and cream or even strawberry! It is important that you beat your ingredients with an electric mixer to ensure you are left with a creamier mixture. Use other chocolate chips, such as mint chocolate, white chocolate or butterscotch! We used our baking pan from our accessory set for this recipe, but feel free to use your own oven safe baking pan. We baked the cookies in our air fryer, but they can also be baked in an air fryer oven or traditional oven. Remember that once your dessert is frozen, let it sit for 15-20 minutes at room temperature before slicing. Since your dessert was frozen, use a knife that has been warmed under hot tap water to ensure you can cut the dessert in half. Top with sprinkles and chocolate or caramel sauce and serve with a glass of cold milk!

 

 

 

Ingredients:

4 cups all-purpose flour, spooned and leveled

4 tsp cornstarch

1 tsp baking soda

1 tsp kosher salt

1 ½ cups butter, melted

1 ½ cups brown sugar

2 large eggs, plus 2 large egg yolks

4 tsp pure vanilla extract

3 cups bittersweet chocolate chips

1 ½ pt. vanilla-chocolate chip ice cream, softened

1 ½ pt. mint chocolate chip ice cream, softened

1 ½ pt. chocolate-chocolate chip ice cream, softened

chocolate sauce, for topping

 

 

 

Directions:

Line 2 baking pans with parchment paper or grease with cooking spray.

Whisk together the flour, cornstarch, baking soda and salt in a bowl.

Beat the butter and sugars with an electric mixer, until combined. Beat in the eggs, egg yolks and vanilla. Reduce the electric mixer speed to low and slowly add in the flour mixture, until combined. Fold in the chocolate chips.

Divide the dough into fourths. Press into 4 6-inch disks and place 2 disks on each prepared pan. Refrigerate for 4 hours or up to 2 days.

Preheat your air fryer to 330°F and place one of the prepared pans in the air fryer. Bake the cookies 20-24 minutes, rotating halfway through, until the edges are golden. Remove the pan from the air fryer and cool completely. Repeat with the remaining pan. If you have an air fryer oven, you can prepare both pans at once! We just recommend you switch them around halfway through for even cooking.

Top 3 cookies with 1 flavor of each ice cream, spreading all the way to the edges. Freeze for 4-24 hours. Then, stack the frozen cookies on a platter and top with the remaining cookie and freeze until ready to serve.

When you are ready to serve, let stand at room temperature for 10-15 minutes. Top with chocolate sauce and enjoy!

 

 

 

 

Keto Strawberry Pie

 

 

This is the perfect summer dish to make during berry season! This is a keto driven dish, but you could also switch out the keto ingredients and make it however you want! Since keto diets restrict berries, except for strawberries, this was the ideal dessert. Omitting sugar and wheat ingredients is important, so that is why the sugar free jello mix, almond flour and coconut flour were used. Xanthan gum was utilized, because it’s gluten free and is often great for baking and thickening. To make this dessert extra sweeter, we used erythritol sweetener, which is natural and without the calories! Take advantage of a saucepan or induction cooktop to mix together the water, sweetener and Xanthan gum mixture. We opted for a premade pie crust, but feel free to make your own crust too! The crust can be baked in an air fryer, air fryer oven or traditional oven. For your baking accessory, use our baking or pizza pan or your own oven safe one. It is crucial to let your dessert set for the correct amount of time to ensure it gets to the texture it needs to. Use any remaining strawberries for decoration or to stick in the top of your pie. It is also large enough to serve to multiple people as this makes about 8 servings. Top this yummy treat with whip cream, graham cracker crumbs, a scoop of ice cream or extra strawberries!

 

 

 

Ingredients:

Filling:

2 lbs. strawberries, cut in half

½ cup erythritol sweetener

3 oz. sugar free strawberry jello mix

1 cup water

1/8 tsp Xanthan gum

 

Crust:

1 1/3 cup almond flour

2 tsp coconut flour

2 tbsp butter

2 tsp water

1/8 cup erythritol sweetener

1 tsp vanilla extract

 

 

 

Directions:

In a large mixing bowl, mix the pie crust ingredients together using an electric mixer, until combined. Press into an air fryer safe pie pan.

Place in the air fryer oven and bake at 350°F for 12 minutes. Cool completely.

Combine the water, erythritol sweetener and Xanthan gum in an induction cooktop. Cook over medium heat until the mixture comes to a boil and turns more translucent.

Turn off the heat and add in the sugar free strawberry jello mix. Stir until dissolved.

Pour the strawberries into the jello mix. Stir to coat all of the strawberries with the mixture.

Pour the mixture into the prepared pie crust. Place your remaining strawberries throughout the pie. Set the pie in the refrigerator for four hours, or until set.

 

 

 

 

Grilled Peaches with Ice Cream

 

 

Peaches and nectarines are the perfect ingredients for this dish, because they make an excellent addition to just about anything! These fruits are juicy with a tender texture that are packed with tons of flavor! Also, the summer season is the time to whip up all those recipes you have containing stone fruits. Stone fruits are ones with flesh or pulp enclosing a stone of some kind, like a peach! If you aren’t fond of peaches or nectarines, use a different fruit like apricots, strawberries, or citrus fruits! Grilling any fruit is ideal, because it brings out the flavor even more and achieves that caramelized taste. Grilled fruits can be used in so many things, like in a salad, eaten by themselves, on a kebab with some juicy meat and veggies or topped with ice cream! Don’t forget to oil your grill plates and your fruit before grilling to ensure they don’t stick or burn. We used olive oil cooking spray but take advantage of canola oil or grapeseed oil too! We added honey and salt on top of our fruit to give it a sweet and salty mix, but you can add other toppings, such as cinnamon sugar butter, honey and yogurt or maple syrup. We also topped it with good, old fashioned vanilla ice cream, but go ahead and switch it up and use pistachio, coconut or honey vanilla! This recipe serves 8 people, the perfect dessert for your whole family!

 

 

 

Ingredients:

2 peaches, ripe

2 nectarines, ripe

canola oil

8 large scoops of vanilla ice cream

honey, for drizzling

salt, for sprinkling

 

 

 

Directions:

Preheat the grill to medium high heat.

Cut your peaches and nectarines into halves. Then, brush them with canola oil and place them on the grill. Grill for 1-2 minutes on each side, or until grill marks appear and the fruit starts to caramelize.

Once your fruit is done grilling, remove them from the grill and onto a serving plate. Drizzle with honey, salt and serve with a scoop of ice cream!

 

 

 

 

Molten Chocolate Lava Cake

 

 

The gooey, chocolate goodness makes this the perfect rich dessert to end any meal. Make this a healthier option by utilizing dairy and gluten free chocolate chips, gluten free flour, a dairy free alternative to butter, or even an egg replacer. Use Ghirardelli chocolate chips for a bittersweet taste or Scharffen Berger chocolate chips for baking. You could melt the butter and chocolate in a microwave, saucepan on a stovetop or an induction cooktop. A fork, spoon, whisk or spatula will do just fine to mix everything together, an electric mixer is not necessary. For the baking accessory, use our silicone muffin tin or your own oven safe ramekins. Make sure to grease your baking accessory with cooking spray, butter or shortening. Use an air fryer, air fryer oven or traditional oven to make this dessert. Powdered sugar is great for dusting on the tops of desserts, so have at it! Pair this treat with a scoop of ice cream, glass of cold milk or an assortment of berries!

 

 

 

Ingredients:

3.5 oz. dark chocolate chips

3.5 oz. butter, unsalted

1 ½ tbsp self-rising flour

2 eggs

2 ½ tbsp sugar

 

 

 

Directions:

In a medium mixing bowl, combine the chocolate and butter and melt it in the microwave. Stir until it is blended. Add in the flour and stir until combined. Set aside.

In a separate medium mixing bowl, mix the eggs and sugar until light and frothy. Slowly mix in the chocolate sauce until blended. 

Lightly butter the inside of a ramekin or oven-safe cup. Pour the batter into the prepared ramekin and place inside the air fryer basket. Air fry at 370°F for 6-8 minutes.

Top with ice cream (optional) and serve immediately. 

 

 

 

 

 

 

Berry Cobbler

 

 

This dessert is ideal to make in the Pressure Cooker, because you just mix everything together and wait for it to pressure cook! Your tasty dish will be ready in minutes. We used an assortment of seasonal berries, because why not?! If you aren’t fond of blueberries and strawberries, you could use other berries like raspberries or blackberries. You could create an entirely different cobbler and utilize apples or peaches! Make this an even healthier option by using almond milk and gluten free pancake mix! When you are making the topping, feel free to use a whisk or rubber spatula or go the extra mile and pull out your electric mixer. You may need to add extra water so that you can allow the pressure to build up and cook. We paired our cobbler with a scoop of ice cream to achieve a combination of crumbly and creamy goodness!

 

 

 

Ingredients:

Berry Filling:

12 strawberries, quartered

1 cup blueberries

2 tsp lemon juice

¼ cup brown sugar

¾ cup water

¼ cup sugar

¼ tsp cinnamon

3 tbsp corn starch

 

Topping:

2 cups pancake mix

½ cup milk

3 tbsp butter, melted

1 tsp vanilla

3 tbsp sugar

½ tsp cinnamon

 

 

 

Directions:

In a medium mixing bowl, mix the berries, sugar, brown sugar, cinnamon, lemon juice, cornstarch and water together. Once mixed together, pour the mixture into the pressure cooker pot. (Note: You may need to add additional water to allow pressure to get high enough to cook mixture.) 

To create the topping, combine the pancake mix, milk, butter, vanilla, and 3 tablespoons of sugar in another bowl.

In a separate bowl combine the 1 ½ tablespoons of sugar and ½ teaspoon of cinnamon.

Then, assemble by placing large scoops of the topping on the surface of the berry mixture and sprinkle with the cinnamon and sugar mix.

Lastly, secure the lid of the pressure cooker and close the pressure valve. Cook on high pressure for 10 minutes. Enjoy.
