Roasted to perfection - these veggies are an excellent side to any meal, such as a juicy piece of meat, pasta, sandwich or anything else you desire!
Ingredients:
Veggies:
1 sweet potato
1 lb. mini red potatoes
1 lb. brussels sprouts
12 oz. carrots
1 yellow onion
1 yellow squash
1 rutabaga
Seasoning:
2 tbsp olive oil
2 tsp salt
2 tsp pepper
Directions:
Slice your desired veggies and place them in a mixing bowl. Toss with olive oil, salt and pepper to taste.
Place your tossed veggies in the air fryer basket with perforated parchment paper (optional). Air fry at 400°F for 20 minutes. Enjoy!
