Pair this cobbler with a scoop of ice cream to achieve a combination of crumbly and creamy goodness! 

 

 

 

 

Ingredients:

 

Berry Filling:

12 strawberries, quartered

1 cup blueberries

2 tsp lemon juice

¼ cup brown sugar

¾ cup water

¼ cup sugar

¼ tsp cinnamon

3 tbsp corn starch

 

Topping:

2 cups pancake mix

½ cup milk

3 tbsp butter, melted

1 tsp vanilla

4 ½ tbsp sugar, divided

½ tsp cinnamon

 

 

 

Directions:

In a medium mixing bowl, mix the berries, sugar, brown sugar, cinnamon, lemon juice, cornstarch and water together. Once mixed together, pour the mixture into the Pressure Cooker pot. (Note: You may need to add additional water to allow pressure to get high enough to cook mixture.) 

To create the topping, combine the pancake mix, milk, butter, vanilla, and 3 tablespoons of sugar in another bowl.

In a separate bowl combine the 1 ½ tablespoons of sugar and ½ teaspoon of cinnamon.

Then, assemble by placing large scoops of the topping on the surface of the berry mixture and sprinkle with the cinnamon and sugar mix.

Lastly, secure the lid of the Pressure Cooker and close the pressure valve. Cook on high pressure for 10 minutes. Enjoy!
